From Home Kitchen to Local Favorite Biscuit Shop | Meet Kate Sousa

We had the pleasure of connecting with Kate Sousa, the founder of Domestikated Biscuits, a Spokane-based bakery known for its perfectly flaky, buttery biscuits. What started as a simple challenge to perfect her baking skills turned into a thriving business that brings comfort, warmth, and connection to her community.

What inspired you to start your journey or business? What was your “aha” moment?

Kate’s biscuit journey began in 2016—not because she was an expert, but because she wasn’t.

"I started making biscuits because I was bad at making them, but my family loved them! So I kept at it, trying new recipes and techniques until I figured out what worked for me."

Her breakthrough moment came when she realized she could freeze the biscuits to bake fresh whenever needed. This small kitchen hack became a game-changer, making it easier to have fresh biscuits on hand.

In 2019, after welcoming her fourth child, Kate saw an opportunity to turn her biscuits into a business—at least temporarily.

"I decided to offer them for sale for Thanksgiving that year. We had just had our fourth baby, and I wanted to pay off the medical bills as quickly as possible."

The response was overwhelming. What started as a one-time sale quickly gained traction, thanks to word-of-mouth and social media. She expanded her menu, introduced new flavors, and adapted to challenges—like offering delivery and porch pickups during the pandemic.

By 2021, it was clear that Domestikated Biscuits was more than just a side hustle. She moved from her home kitchen to a commercial space, and in fall of 2023, she expanded to her current location at Spokane Food and Events.

What challenges have you faced along the way, and how did you overcome them?

Scaling from a home-based business to a commercial operation was one of Kate’s biggest challenges.

"I think if I knew from the beginning that I was 'starting a business,' I would have been too intimidated to start. Instead, I took each step as it came—licensing, finding a commercial kitchen, and growing organically."

Through persistence, faith, and taking it one step at a time, she was able to turn a passion into a sustainable business.

"I really felt, each step of the way, that Jesus was with me and He guided me where I needed to go."

What do you love most about what you do?

For Kate, baking biscuits is about more than just food—it’s about connection.

"So many things! I love making food that people enjoy! Come on, who doesn’t love a nice flaky biscuit?"

Beyond the joy of baking, she takes pride in supporting her family through her business and providing job opportunities for others.

How does your work contribute to the Pacific Northwest community?

Kate believes that food has the power to bring people together.

"I really love serving my community and getting to meet new people."

A highlight of last year was participating in the Fairwood Farmers Market, where she had the opportunity to engage with customers, share her story, and grow her presence in Spokane.

"We had such a great time meeting new people and seeing customers that we have known for years."

What inspires or motivates you every day?

Kate finds daily inspiration in her family, her kitchen community, and creativity.

"I am so inspired by sharing a kitchen with other food entrepreneurs. The creative atmosphere and collaboration are so encouraging."

She also enjoys experimenting with new flavors and turning everyday treats into biscuits and scones.

"I love drawing ideas from other foods I enjoy—like, what would a Pumpkin Spice Latte taste like as a scone? And I found out—it’s amazing!"

Her biggest motivation? Her husband, Joe, and their four children.

What advice would you give to someone looking to follow a similar path?

Kate’s advice is simple but powerful:

"Go for it! You never know until you try."

She emphasizes starting small, taking one step at a time, and letting the journey unfold.

"Develop your skills and product first. Then start offering it for sale and see what happens!"

What are your goals for the next 1-3 years?

Kate has exciting plans for Domestikated Biscuits in the coming years:

  • Expanding into wholesale by landing restaurant accounts.

  • Growing her presence at local farmers markets.

  • A personal goal—bench pressing 100 lbs in 2025!

What’s something people might not know about you?

  • She has ten siblings!

  • She rediscovered a love for weightlifting last year.

  • She’s lived in Spokane for nearly 20 years but grew up in the Midwest.

What’s your favorite way to relax or recharge in the Pacific Northwest?

For Kate, recharging is all about family time and simple joys.

"I love taking my kids to the library—we read aloud together a lot."

She also enjoys spending time at the lake in the summer and staying active at the YMCA.

What’s a hidden gem in the Pacific Northwest that everyone should know about?

Kate’s pick? Loon Lake.

"I think Loon Lake is the best lake! It’s where we go to unwind and enjoy summer."
